Chicken and Nectarine Poppy Seed Salad
My husband has a new favorite recipe site – Pinch of Yum. This is where he discovered this yummy salad. He made some slight changes to the recipe to make it more 21 Day Fix friendly. We all snapped it up and there was some left over salad dressing that I took with me to work the next day. It was delicious.
Since the recipes are online at Pinch of Yum, I am just going to share our 21 Day Fix approved ingredient list and link to the original recipe.
Chicken and Nectarine Poppy Seed Salad
- 2 large chicken breasts (plus salt, pepper, olive oil for seasoning)
- 1 cup blueberries
- 2 ripe nectarines, cut in cubes
- 6-8 cups baby spinach
- ¼ cup chopped toasted almonds

Homemade Poppy Seed Dressing
- 2 tablespoons chopped shallot
- ½ tablespoon butter
- 5 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon semi-sweet white wine
- ½ tablespoon cider vinegar
- 2 teaspoons honey
- ½ tablespoon water
- 2-3 tablespoons poppy seeds
