Cranberry and Clementine Salad
I have been stalking a few paleo account on Instagram to find some new recipes to try. I came across this one by Paleo Leap this past week and could not wait to try it.
I loved the tart from the apple, sour cranberry, sweet oranges, acidity of the dressing combined with all of the rest of the flavors. It was a tasty salad packed with great flavors and textures and it filled me up. Loved it.
Here is my version of their recipe…
Ingredients
Salad
- fresh spinach
- dried cranberries
- 4 eggs boiled
- 1 to 2 clementines, peeled and separated
- granny smith apple
- slivered almonds, toasted
Poppy Seed Dressing
- 1/4 cup olive oil
- 2 T apple cider vinegar
- 1 T lemon juice
- paprika to taste
- onion powder to taste
- 1 T poppy seeds
Directions
Mix the poppy seed dressing. Set aside.
Toast the almonds on a frying pan on the stove. Watch carefully and stir until lightly browned. Remove from the heat.
In a bowl, create the salad with spinach, sliced apple, cranberries and peeled and separated oranges.
Drizzle dressing on top and toss gently.
Place sliced eggs on top and sprinkle with almonds.
Serve.
