Good Eats Granola
A little goes a long way with granola – it can be high in calories but it is packed with healthy fats and fiber-filled carbs. Ideally I will eat no more than 2 spoonfuls per day to give me my daily fiber, nuts and seeds. When I started with 21 Day Fix and I decided adapt my favorite recipe to stay true to clean eating.
Ingredients
- 5 cups old fashioned oats *
- 3/4 cup almond, slivered or chopped
- 3/4 cup pecans, chopped
- 1/2 cup dried unsweetened cranberries
- 1/2 cup shredded coconut
- 1/3 cup pumpkin seeds
- 1/3 cup sunflower seeds
- sprinkle of sea salt
- sprinkle of cinnamon
sweetener and oil
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/4 cup olive oil or coconut oil
Directions
- Preheat oven to 350F
- Combine all dry ingredients in a 9 1/2 x 11 pan. The pan should be non-stick, stoneware or lined with parchment.
- Pour the oil, honey and syrup (in that order) in a bowl. I use my glass pyrex measuring cup for this. Then pour onto nut mix and mix with a rubber spatula.
- Place granola mix in the oven for 25 minutes. Stir the granola.
- Keep the granola in the oven for 10 to 20 minutes more until it browns nicely. Watch closely so it does not burn
- Take the granola out and let it cool before storing.
Ultimate Portion Fix
I’m repeating the ingredients from above but if you want to stay true to clean eating these make a difference:
- unsweetened cranberries – technically cranberries are not on the list of allowed foods. You can omit these or use another dried fruit such as cherries. DO NOT use dehydrated fruit – it will burn.
- extra virgin olive oil or coconut oil
- Maple syrup, honey and coconut oil are not on the allowed food list technically allowed foods in the the 21 Day Fix plan but they are used in some of the recipes in the program. Sweeteners should be used sparingly when you are on the plan.
