Oatmeal and Cashew Pancakes

oatmeal cashew pancakes

Ever since seeing Autumn’s video (see below) on how to make oatmeal cashew pancakes I’ve been wanting to try them. I finally got around to do it this morning.  It it very filling!

Ingredients

 

2 cups old fashioned oats *

1/2 cup cashews

1 teaspoon coconut oil

1 1/3 cup water

1 tsp vanilla

1 tsp cinnamon

1/2 tsp nutmeg

1 1/2 cup berries

Directions

 

  1. Place oats, cashews, cinnamon, nutmeg and salt in a food processor or blender; pulse until coarsely ground.
  2. Add add egg, oil, water, and extract and mix until well blended. If it is as thick as paste add 2 to 3 additional tablespoons of water.
  3. Heat medium nonstick skillet (or griddle), lightly coated with spray, over medium heat.
  4. Using a measuring cup pour 1/4 cup batter into skillet for each pancake; turn after bubbles form on top.
  5. Flip with spatula and keep on the pan until fully cooked.
  6. While the pan is still hot quickly saute the berries for no more than 30 seconds. This will help it release juices and enhance its flavors.
