Oatmeal and Cashew Pancakes
Ever since seeing Autumn’s video (see below) on how to make oatmeal cashew pancakes I’ve been wanting to try them. I finally got around to do it this morning. It it very filling!
Ingredients
2 cups old fashioned oats *
1/2 cup cashews
1 teaspoon coconut oil
1 1/3 cup water
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 cup berries
Directions
- Place oats, cashews, cinnamon, nutmeg and salt in a food processor or blender; pulse until coarsely ground.
- Add add egg, oil, water, and extract and mix until well blended. If it is as thick as paste add 2 to 3 additional tablespoons of water.
- Heat medium nonstick skillet (or griddle), lightly coated with spray, over medium heat.
- Using a measuring cup pour 1/4 cup batter into skillet for each pancake; turn after bubbles form on top.
- Flip with spatula and keep on the pan until fully cooked.
- While the pan is still hot quickly saute the berries for no more than 30 seconds. This will help it release juices and enhance its flavors.
