Zesty Lime Coleslaw
I made this recipe for the first time in years!! Keep in mind that I use this recipe as a guideline. Since the two heads of cabbage I purchased for this yields far more than 5 cups, I just include all of the cabbage and double the quantities used for the dressing. When I made this last month, the entire salad was closer to 14 cups. This made a delicious salad and since I only doubled the dressing quantity, this made for a very tasty and yet healthy dish.
Ingredients
- 4 cups shredded red and green cabbage
- ¼ cup red onion
- ¼ cup light mayonnaise
- 1 shredded carrot
- 1 tsp grated lime zest
- 2 limes
- 2 tsp sugar
Directions
Put all of the veggies in a large bowl. Mix together.
Add the sugar, lime and mayonnaise and mix well. Store in the fridge for about 1 hour before eating.
